But being 1 shot with a pick axe (on 100% health and just cloth) which is fair enough, as possibly a headshot. But in every instance the person doesnt even move towards me or raise the pickaxe. They actually are standing a fair few meters away doing nothing, yet im hit with an invisible pickaxe. No chance dodging something i cant see. I dont have lag so that doesnt explain it (my side anyway).

Had something else incredibly strange, guy runs towards me and straight through me and disappears. Nowhere in sight.

All of the things you said are possible - but it could of also been a glitched shotgun model so he just pumped you in the face.
There is no model for a pickaxe in someone's hands. It will show the hatchet model.
