Everytime I log off for the night, I login and not only have I died, when I KNOW for 100% fact that there's no way I could have died and NOBODY killed me, but EVERYTHING I researched that day is GONE as well. Thoughts? And no the server has not been wiped, my house and all my shit is still here, as well as everyone else's.

Sounds like a wipe of the player's data.
To my understanding, a friend of mine said that a cpl of the Official servers appeared to be having "roll backs". Several hours of work down the drain when it happens. Only good thing that comes out of it, is I believe he said that any items he took out of boxes within those few hours to the roll back, had been duplicated and replaced in the boxes again.
I think he said something about having like 4 stacks of wood in a box, logged off with them in his inventory, and when he woke back up, his progress had gone back to pre-log off, and the stacks of wood were replaced in his boxes, tho he still had 4 stacks of wood in his personal on character/avatar inventory.
