my rust server crashed suddenly yesterday evening ... and since then it seems not to load the world anymore, could it be that the map is too big ?

That is your problem. We aren't sure exactly what causes it, but we suspect that it is the result to removing support objects(like pillars) and forcing parts to stay up that shouldn't because of lack of support. Basically, you gotta wipe the server and restart it.

Could "-server.stability=false" help me in the future so it doesn't crash if someone removes one / many pillars ?

Thats a really good question. I have no idea. You should try doing that and see if anything changes, because that would help confirm or deny our suspicious. Ive seen this happen on other servers not just our own, but I don't think we have enough evidence to know for sure what is causing it.
