I know that some servers have maps in playrusthq.com, but most of them don't. Is there a way to find the maps for these servers? Or is it possible to find which seed the server I play on has?
If you connect to a server via the console it generally tells you the size and seed in the console.
To do that, find the server IP, and then use the command 'client.connect xxx.xxx.xxx.xxx.xxxxx'
I did read a twitter update that suggest this information will be accessible from the menu tho so you might not have to use the console soon enough.
Ask the owner or an admin what the seed and size is. Go here.
