I used to have a pickaxe to kill zombies by only 1 hit, but now I dont find whats the point for the pickaxe.
It is slower than the hatchet colleting resources. And really slow if you want to attac somebody.
It's fantastic if you want to gather rocks or woodpiles, as it gets 20 resources instead of the standard 10 from the steel hatchet.
You can't just use it to replace the hatchet though, you need both.
As the person above said. Despite it inflicting damage and being in the Weapons category, think of it more so for the tool functionality it has rather than its attack usefulness.

1 Pick swing gathers the same as two Metal Hatchet swings from Wood Piles and Boulders. Hatchet is still better for gathering from animals though.
I've killed my fair share of blokes with the ole pickaxe. Does decent damage actually, you just have to learn to properly telegraph the attacks.
Against a rock or hatchet foe you have the definitive upper hand. Also great for sneak attacks on people currently firing at other targets.
The pickaxe does gather faster from resources, but only by a very negligible amount. I don't know the exact time, but it's under a second. I use it though because when you're gathering a node, with the pickaxe you can look around you in between the swings, but with a hatchet you can't.
I never bother crafting it, but if I find on I'll keep it.

I can look around with the hatchet while gathering, work's fine. Fair enough can't get a good view from a distance before needing to turn around. But you can see those idiot's that try to sneak up and smash you in the back of the head

Yeah, you can still look around. But you're view will be heavily obscured and you'd be surprised how easy it is to not see someone right behind you. With the pickaxe you can take slow, careful looks and get a better view.
I'm fond of the pick axe as both a tool and a weapon. As others have noted, it gathers twice as many resources per swing than a hatchet. Even being bulky and slower, you complete your resource collection a bit sooner.
Everyone will have different choices but for me:
1. Kill animals with bow/arrow; use hatchet to gather their resources
2. Mine rocks and wood piles with pick axe
3. Attack known hostile players with the bow/arrow from a distance; pick axe them in the skull as they reload
Hatchet > Pickaxe.
Pickaxe gets twice as much resources but swings half as fast. But when you get that last slow swing in, that only gathers 1-3 thats left, the hatchet is better.
I strafe circles around the resources while gathering to watch my back
IMO, pickaxe is better.
Takes less swings to gather resources, which I think also makes it so it consumes less energy, and it feels like it gathers it faster, at least in terms of resource nodes.
In combat it feels like a beast, really easy to sprint-kill people with 2 hits from the pickaxe, while you kinda have to stay close to the person or slow down if you want to hit them with the hatchet
Advantages of pickaxe : better in 1vs1, good for killing animals, better than hatchet for destroying doors and stuff, you can look around when you're gathering ressources without missing the rock
cons : shitty to gather animals ressources

Hatchet better imo because its multipurpose the only thing the pickaxe is better at is destroying buildings and objects. Looking around while gathering is the same for both you just run around with hatchet.
Food consumption is the same for both.
Don't see why you would want the pickaxe over the hatchet as it is almost always not worth it to wait twice as long for the last swing to get 1 wood etc.
