Hello I'm looking in to buying a dedicated server for hosting gmod servers. but I don't know what operating system to select Windows or Linux. Can you guys tell me the benefits of each operating system. Thanks
Windows if you run a windows computer
Linux if you run a Linux computer
Although Pretty much a lot of people run on a Windows computer, it'll be best because it uses TC ADMIN and Linux doesn't have that advantage for a easy preparing server.
I can't tell you much about Linux because I've never seen a Linux view of perspective of things even though I could be wrong.
If you do however buy a dedicated server for gmod servers you should consider on making the prices low if that dedicated server is a really good one because it'll attract more players = more $$ = popularity..

This is a great example of someone who has no idea what they're talking about.
Out of my experience, Linux gives you a lot of access to configure just about everything and, depending on what distribution you roll with, is as barebones as you need it to be. Windows is Windows, really. Of course, the server software is different than Windows, but I've toyed with some of the Windows server software at someone else's workplace and it's a lot like normal versions of Windows, although with cuts and additions guided towards running a server.
To help make my case, Linux servers can be run with just a terminal and no interface. I know plenty of people that remote into their servers and use the terminal alone. Then you have Windows Server 2012 which looks like this:

I'm going to go ahead and say I partially don't know what I'm talking about, seeing as I've set up a server on Linux machines and have only messed around with the GUI of Windows machines, but that's what I can tell you for certain. Plus Linux is free, so it's usually cheaper when renting servers.
You can run Windows Server without a full GUI. That's actually how it's setup by default, but most VPS providers like NFO configure their machines with the "Desktop experience" package (or whatever it's called) preinstalled. This is probably done so users won't be baffled by the lack of menus or the traditional explorer interface and a black screen with a command prompt window staring them in the face.
I'd say use whatever works best for you. In terms of performance, doesn't make much difference either way. If you're more comfortable with Windows then use Windows, if you're more comfortable with linux then use linux.
