I have been thinking about keeping a log of my chats on the servers I play on but don't have any type of access to server logs.
When I googled this I got posts talking about a "condump" command that would let me dump everything from my console. This command does not seem to exist.
Ideally I'm trying to get a log file that I can pipe into script outside of gmod to format and archive. Is there anything else I can try?

You can launch the game with the "-condebug" parameter. Console output will be put in the console.log file.
