I just installed ASSmod onto my gmod server and I was wondering how to change the default gamemode settings (PVP Damage, Player Damage, ect), because whenever my server crashes it will revert back to there defaults and I have to manually change them back.
If I remember its in the data folder on the server. Lookfor Assconfig or something
nope it appears to be under ass_sandbox_options.lua, but even then I don't know how to change the defaults.

You could just change the settings using a server.cfg. That, and the command line. (NEVER put the RCON in the server.cfg)
