How FPS will differ on same hardware running Garry's mod server on Windows and Linux(using Wine and Xvfb). I need to know because i have server with Linux and install Windows on it is not possible. I've tried to run it but don't saw difference.

Its about the same, and brings problems of its own. Windows is sadly the only reliable option at the moment.
