1gb RAM seems small, especially when you're gonna run 2008 server on it as well. SRCDS can use up to 600mb so do the math.

If you mean 5 servers, do the math (600mb*5) is 3gb, 2 minus OS will not cut it.

Get a dedi if you want to even attempt to run 5 servers.

I've ran SRCDS on a 512MB VPS pretty comfortably but you're gonna run into latency spikes when someone on your node starts hogging a bunch of resources. If you're serious about running 5 servers, go for a dedi.
