I wouldn't say I'm an expert or anything, but I rarely find myself looking stuff up for javascript/jquery, html, and C. I look up CSS all the time though
I look things up all the time. Without Internet access I'd probably have a hard time coding :S
I have an obsession with checking my arguments on functions (for example) before I test so I always check on documentation first.

C++ and C are my favorites. Lately I've been writing a lot of Python. I used to use Ruby a lot but it's been a while since I wrote anything major.
Java and OCaml.
I use Elisp all the time but I still find myself looking things up too often.

How I test for syntax:
1. Write a bunch of code, maybe like 1 class at a time before testing
2. Test
3. Errors galore
4. Fix errors
5. Test again
6. Missed a few syntax errors
7. Curse a lot that I missed a parentheses or bracket or some stupid shit and get more angry than I really should
8. Fix all syntax errors
9. Test again
10. No syntax errors
11. ...
12. Segmentation Fault

It's got a small community, but its recently been becoming more popular. It is purely functional and runs on the JVM, so you can do Java stuff with it, but its generally not the right solution.
I've also been doing Scala lately. If Java and Clojure had a baby, it would be Scala.

C++ is currently my favorite, though I started with C once upon a time. I would describe myself as a perpetual RTFM programmer.
I'm starting to delve deeper into Java(I haven't had much experience with it other than a few android apps that I wrote) because of school, not quite sure how I feel about it just yet.
I mainly use python for pretty much everything, but I do well with C++, C# and JS.
