Is there any tutorials, fairly in depth that teach how to extract models from non source games and make then compatible with GMod?
depending on what game your looking to port to GMod. Some you have to rerig the model, some just need a .qc change(goldsource, and nothing else pretty much), and some you have to extract with UModel and scale it to correct size and write a .QC and make files for the flexes.
Yep like uaredead said there are many different ways in which porting can be done and it all depends on the game from which you are porting from. Understating and using a good 3D authoring package like 3dsmax, blender or milkshape would be the first thing to consider doing though as you'll need to figure out a workflow and might need to rerig the model for source depending on what its going to be used for eg. Playermodel/NPC
Don't forget, if you're talking about like ragdolls and stuff those will need to be rigged.
