you click the star icon on bottom right , this gives u screen of the world, in this screen you click a starting port and an end port en set wat good to trade, then you select in bottom right the ships you want to have this trade route, and click ok

At first you buy them from the trader, then when you reach the 2d civ level you can make them yourself, if you can't find out how to do that, stop playing anno lol

Once you settle somewhere with mineral deposits, you can mine it and refine it into tools. I think it's Iron.
I don't build ships until my economy is stable.
