Well, its not first person, but I think space station 13 is a pretty good RP. I can't think of anything else other than that and DarkRP(Any GmodRP here)
Mass Effect series, I guess? It's third person but I think you meant direct control rather than specifically first person.
But Oblivion is very RPG-y. It has an enormous set of spells to kill people, summon things, make people easier to kill, make your friends harder to kill, make people get angry and attack their friends, stop your friends from running away, make yourself invisible, make people temporarily like you more, light up the room, see in the dark, make yourself sort of invisible...
And the melee combat is fairly interesting as well. At a high level, the blunt weapon power attacks might paralyse people and the blade weapon power attacks might disarm them.

Only thing that comes to mind is Mass Effect; lots of RPG elements and it's a shooter.

Wurm Online is good. I really suggest playing it with a few friends though. It will become tedious very quickly on your own.
There is always alot of non-combat stuff in the Fable games.

The knife and fork thing means you're hungry, and the less green it is the more hungry you are. You don't have to eat much though.
