Just a quick one:
My two current professions are skinning and enchanting.
My skinning is around 338, and my enchanting is about 286.
I've recently come to think that enchanting is far from the best option, and i'm thinking about swapping it for blacksmithing as that seems like a more interesting skill, with higher demand.
I've payed off all expenses for the regents i used on my way to 286 and i would have thought that skinning would help pay for the oh-so-expensive bars.
So i'm asking for the opinion of you, the lovely members of facepunch, as to whether I should change my enchanting profession to blacksmithing, or stick with enchanting and reap the potential benefits at a later level.

I'm currently a level 50 human warrior with plenty of funds
If your professions are that high at your level, I personally would keep them.
Alrighty I'll keep that in mind.
What are the benefits I could get from higher enchanting levels do you think?
The best thing i've come across so far is something that increases mount speed, and an enchant to increase cloak armour by 50. (Despite armour not being everything)

the 3 gathering professions have related crafting ones
Mining - Blacksmithing, Engineering, Jewel Crafting.
Skinning - Leatherworking.
Herbalism - alchemy, inscription.
Then you have Enchanting and Tailoring where you get mats through either disenchanting or scavenging.
There are 2 reasons people level proffessions: 1. making money and 2. perks.
At higher levels certain proffessions give certain perks.
Enchanters can enchant their own rings
Tailors have special cloak enchants
Inscription has special shoulder enchants
Alchemy gets increased stats from flasks and elixers
Engineers get special enchants (as well as awesome ones)
Blacksmiths get 2 extra gem sockets
Leather workers get a super wrist enchant
Jewel Crafters can cut 3 gems with increased stats
then the gathering proffs give you some perks too
Herbalists get their own heal
Skinners get increased crit rating
Miners get increased stamina
So there are all the facts, you need to consider what you want to do at end game? as a warrior you can tank or dps, if you wish to tank I suggest picking up mining and either leveling engineering, Jewel crafting or Blacksmithing, as these give you the biggest stamina perks, which is what you need as a tank.
if you want to dps at end game, the crit from Skinning might be nice, so I suggest getting Leatherworking for the Attack power wrist enchant perk.
Enchanting is also a very nice endgame proff for the ring enchants.
Either way, my final advice is, who cares? the mid levels are useless and boring, spend less time worrying about if your level 50 proffs are ok, and spend your time getting to level 80
