There's a fairly old arcade game called Chimera Beast that involves evolution, but you'd have to get an emulator like MAME, and although it's a good timewaster, it probably doesn't have the length/complexity you're looking for.

Already made it to space stage.
The game did not satisfy me with it's extremley short play time.

That was a pretty good game. It did seem a bit shallow and dull at times though, most of my playtime was just mixing the creatures haha
I remember a freeware (I think open source) evolution game. It was played in window mode, represented an earth globe and gave you the ability to spawn turtles, dolphins, plants etc and let nature do its work.
Nowadays, I smoke too much of that nature to remember the name :ohdear:

It's not really like Pokemon at all. You play as a single creature, and you advance through stages fighting/eating other creatures, and the more you eat, the more points you get to spend on different body parts to evolve.
You start out as a fish, and later on you make the move onto land, playing as a dinosaur, and I think eventually you can become a mammal/human, and even later than that you grow wings, and I'm pretty sure the final stage takes place in some building up in the sky. It's mostly like a platformer, and the fish section is just like... A water stage from a platformer. It's a really good (kind of overlooked) SNES game

There's a game on the gamecube called Amazing Island, it's 100% cosmetics though I think, I haven't played it in ages, but you could create a creature from scratch by drawing out the limbs in 3D and playing with it.
I never realized how lacking this genre is, developers need to get on this shit.
Other than Spore I really don't know about any other.

I spent so many hours on that game as a kid. Only wish I still had it's disk.

Played them all. 1 was enjoyable, 2 was the best in my opinion, and 3 was a major dissapointment.
