Recently, I've noticed only Blood Elves have paladin. Which horde race had paladin before BC?

They already have. They're called Sunwalkers. Just as druids and such worship the moon, these taurens draw their power from the sun.

Also don't start that "lorewise" crap, it's already been stated in Cataclysm that the desperate times call for races to look towards new walks of life.
The only one I was really confused about was that specific race/class mix. I'm personally excited for dwarf shamans, i'd always wondered if they would ever be put into the game ever since I learned that they were common with the wildhammer dwarves
To a certain degree every new race / class combo makes sense.

Having a close relationship with Dwarves and an affinity for magic then I don't see why. Tauren paladins have already shown that light doesn't need to be drawn from some sort of deity, so gnome priests is perfectly viable.
