FRACT definitely belongs on this list, but it does have its own thread... It's a musical exploration game with puzzles, a very immersive (and highly reactive to player interaction) soundscape, and a music studio built solely to allow the player to create their own compositions. The game teaches you how to use synthesizers, in case you were wondering how the Studio would be useful. The sound is generated in real-time, and the entire world is, in a way, a giant instrument. http://fractgame.com/ Also have a thread on Nidhogg, but it's in need of some love and dusting off.
