Does anyone have recommendations for varnishes? Matte ones specifically?

Laquer or Enamel? How they are handle is different, so I wonder which you prefer. If you do not, then Tamiya Spray Laquer matte clear issimple to use, and work fine for what you wish.

I would do so many more models if I could paint them worth a shit. I dunno how I did it but when I was a kid I always found tons of metal shelled, pre painted, highly detailed models but now all I can find are white plastic ones

Any of you's personally reccomend an airbrush? (as in which airbrush) Wanting to get one so I can stop with the extra thick paint on my models.
i'm not much of an airbrush guy, but from what i've heard the Paasche H-Set air brush set is a great one to start on.
