Chunky goes well with preserves. I personally LOVE chunky peanut butter and strawberry preserves sandwiches.

Smooth goes well with jelly or jam.

Depends on the mood I'm in, if I just want general PB&J I use smooth, if I'm making Calvin and Hobbes style sandwiches for hiking, I like to use crunchy.
