I'm building a computer soon for heavy gaming (I intent to play games like Crysis/Metro 2033 at 1920X1080 at max settings) and I wanted your opinion on what I'm thinking of using for my build:

The max budget is about $1650, and the total cost right now with combo deals and rebates with shipping is approximately $1559.87. I also have to also buy a monitor, speakers, keyboard and mouse. I have about $400 set aside for those. Any recommendations for monitors (Budget for it is about $200), speakers ($100 Budget) would be nice. I am also thinking of getting a MX 518 for my mouse and a Das Keyboard Professional for my keyboard, so any opinions on those would be nice too.
EDIT:
Also, what would be your recommendations for free antivirus (I was thinking of going with Microsoft Security Essentials) and firewall software?

I noticed that if you combo a 580 with some software it gives you a lower price than just the card.

or you could combine the 580 with the i7

but I'd rather combine it with a motherboard, there used to be a combo with an MSI gd55 but I guess it's gone now.
Do you think you could salvage a surge protector? Because if you could the price could be brought down. Every dollar counts.
Oh, I accidentally added that to the list. I intend on buying one, because the only surge suppressors in my house that not in use are in the attic right now, and that is a pain in the ass to get to so I'm just going to spend $20 to buy one, because that isn't really much money, really.

I have that combo (With the 580/i7), I just forgot to list it.
You could save some money by going with Home Premium of Windows instead of Professional
Look for some more combos
I recommend the MX 518
The build looks very good overall

I wanted to go with Professional because of XP mode (I have some old games that I would like to play that only work under XP), and because with a combo deal with the PSU there is only a $15 difference between it and Premium. Should I still go with Premium despite the $15 difference?

Oh if it's only $15 go with Premium

XP Mode is really only meant for business programs. It is not really a full copy of XP so you can't expect it to run everything XP did. You would be better of just getting a Virtual Machine installed instead.

In that case, I might as well just go with Home Premium. I don't have any programs like that I intend to use, so I wouldn't really have a use for it then.
Get a Z68 mobo instead of P67.
Get a Z68 mobo instead of P67.
why
Get a Z68 mobo instead of P67.
I don't really think I would need any Z68 features. I won't be using the integrated GPU, and I don't really think I would need the SSD as a cache thing.
I'd pick a different thermal paste, maybe MX-3 or MX-4. Everything else in the build looks reasonably good. If it was my build, I would get a SSD (Vertex 3 120GB) and perhaps change the GPU to a slightly cheaper one (480/560/570) to make up for the cost, but if you don't think a SSD is good value for money for you, that's fine. In my experience, upgrading to a SSD has made a huge difference in speed and responsiveness. I don't game a lot though, so I don't know if it's worth it for gaming.
Also, the MX-518 is a great mouse, you can't really go wrong with it. MSE and Avast are good free anti-viruses, Comodo is a good free firewall.
