How to Restore an iPhone/iPod WITHOUT Updating it.

I am Currently Testing this myself to make sure it works, With a 3GS 16GB. I am restoring back to 3.0.

And Download the Restore file and Firmware required. iPod Touch Firmware is with the iPhones.

Put your Device into Restore mode, With it Odd, Hold Home button while inserting Connector to the device, hold the Home button until you see the "Plug into iTunes" Screen.

At that time, you can release it. Open up iTunes, and there will be an alert saying that your device is in Recovery mode. Press OK and Continue.

While Holding SHIFT (I used the left one), Press the "Restore" Button. A new open window will appear and simply find and select the new .ipsw file you downloaded.

Your Device should now start to be in recovery mode.

Let iTunes do its thing and Pray.
