Really good read, intelligent criticism of going too deep in simulation.
K.I.S.S. principle in simulation games, I like that.

Do they have to understand them though? I mean, look back at dwarf fortress. The average person doesn't understand geology and stone layers, but the game simulates them accurately nonetheless. As a player, understanding the system enriches your experience and ability, but it isn't necessary to play and enjoy the game.

Dwarf fortress is hardly a good example as it's not exactly a game with wide appeal or good performance for that matter.
If the simulation is there, but it isn't necessary(or even noticed) by the majority of players, it isn't really needed.

Very early in development and a public version isn't out yet, but the idea seems very good.
