I'm planning on getting Vertex 3 which needs a Sata 600 connection.
I have a I7 920 so is a I5 2500K a upgrade or downgrade?
Should I wait for Bulldozer / Ivy Bridge?
depends, in gaming it will make no difference, and the 2500k/2600k overclock incredibly well
if you need it for the threads, get a 2600k
It depends what you are doing, if you are gaming, then yes, the i5 is an upgrade (as it overclocks automatically above the 920's clock speeds) and also gives you the new intel socket, which will be compatible in the future. If you render however, you [b]may[/b] wish to keep the hyper threading of the i7 (though it is not much of a performance bost compared to higher clockspeeds).
You could wait until you have enough for a sandy bridge i7 though, which is the best of both worlds.
Also, don't wait for ivy bridge, as it is compatable with your sandy bridge mobo.
EDIT: The i7 you have is a fairly low-end one, so the 2500k is almost definitely an upgrade

I'm really considering to buy a Vertex 3, which is a Sata 600 SSD.
My motherboard supports Sata 300, so I will have to buy a Sata 600 controller for my second PCIe slot.
I mainly use it for gaming and homework.

I thought all socket 1155 mobos had some sata 6 ports anyway, unless you plan on putting the i5 in your existing motherboard, which wont work.

it doesn't matter unless it actually exceeds SATA 2's limits

vertex 3 does, by quite a bit
can't quite remember if it was equal to or better than intels new ones
