What is the difference between the iTouch 2g and 3g?

Well, the 3g is only about 85 bucks more on eBay, so it's not too much. What's the difference, since it doesn't have calling or texting or what not.

Also, if you wanted to know, I was going to jailbreak it. Also, how do I get the latest firmware for free.

well, I can't tell you how to get the latest firmware for free (Warez)
But, Supposedly the 3g is a little faster and Slimmer.

Physically, the 3G is identical to the 2G.
Functionality-wise, the 3G has Voice Over along with other accessibility options.
From a technical perspective, the 3G has a faster processor and GPU and thus, is better at handling graphics-extensive games. The 3G also has twice the RAM.

The firmware can be retrieved from [url]http://www.felixbruns.de/iPod/firmware/[/url]. It's not warez because the files are actually retrieved from the Apple website itself. If they really cared, they would block that feature.

The 8GB model is exactly the same except it comes with the new firmware

There's only a tethered jailbreak available for the 3Gs, which isn't really a problem if you have access to a computer every day, but otherwise it's a little inconvenient.
