The iPhone has about as much buttons as an average watch. Its touchscreen face is nigh impervious to water and so is its back - the only major weakness to water it has is the buttons and the few holes around the casing (microphone, headphone and dock connector ports). It seems like it wouldn't take much to make one water-resistant with sealed buttons a la watches and sealing the holes in the bottom ports - so why aren't phones like these made the same way watches are?

Manufacturers want them to have a weak point so you'll have to buy new ones. They're evil and sneaky.
Things can't be too convenient. Can't make as much of a profit off of perfect as you can with something that has flaws.
you can't talk underwater
Probably the same reason they don't have free caller ID, they can charge you extra for it later on the road.
