I'm not exactly well-versed as most of you guys when it comes to PC building, i'd like a second opinion on this build for Me & my dad.
Note: I've already got a decent graphics card, so that's why there's only one on there.
If there is something iffy about one or more of the parts, could you recommend me parts of the same performance/standard?
Get either a Z75 or Z77 motherboard, most Z68 boards won't work without a BIOS update to accommodate Ivy Bridge processors. ASRock Z75 Pro3 is a good cheap board. There are better and newer cases for the price, Cooler Master 690II and Corsair 300R are nice, not sure on UK prices but they should either cost about the same or cheaper. The Radeon HD 7870 generally outperforms the GTX 660 in most games, and can overclock a fair bit better. Do you both have adequate power supplies already? Exact model would be nice to know.

Also swapped up to Z77's, he wants to keep with NVIDIA because he's always had NVIDIA and doesn't want to OC it. He also wanted to up it to 32GB of RAM each.
32gb of RAM is definitely overkill. Stick to 16gb at the most, there are 2x8 Corsair Vengeance Low Profile kits so that you won't be taking up all 4 RAM slots and can upgrade later. What's the manufacturer of your PSU?

Yeah, depending on what you use the computer for RAM usage generally won't go past 8gb, but RAM is cheap now anyways and there's nothing wrong with tbe headroom.
Ram comes in two cards, you're buying double what you can hold.
