The 295 is indeed the pinnacle of consumer video hardware. Though it is SLI in a box, and has all the disadvantages of that. Personally I'd go for a 285 but wtf.
4890 is decent too at a more digestible price.

Graphics card, as the OP stated.
If you're getting two of anything get two single cards, as the advantage of quad SLI is even more questionable than plain 2 way SLI. Same goes for Crossfire. (Or just get SLI or Crossfire in a box with the 295 and 4870X2)
get three GTX 285s.

I'd say a 4870X2. If you play GTA4, there's errors with the SLI configs. I haven't seen any problems though with a crossfire of ATI cards.
What are your current specs, you could get an awesome monitor that actually needs 2 295's or 3 285's (most powerful option)

You're using a wrong color profile. Fix it.
gtx 295 is not the best, its 2 260 gpu's stacked onto each other
if you really want overkill get yourself a tri sli build of gtx 285's
or crossfire 2x 4870x2 if you like to play gmod on 999 fps
