As I'm a person who likes reading and listening to others opinions I have decided to make another one of these threads. So... Here goes...
Action/Stealth: Metal Gear Solid 3
Criticised for being one of the weirdest in the series, MGS3 triumphs in gameplay, story and atmosphere IMO. Really aces everything, and fuck me if that was just me being a fanboy. Hell, it's a personal opinion, isn't it? It's the only game of it's kind (besides MGS4) where you can blend within your surroundings. Capture and kill in the jungle for food. And it also gives you heaps of options to tackle each environment. It gives YOU the choice. It may be too linear, but each area is like a mini sandbox where you can either blow shit up or sneak around or have a variety of the two. Also MGS3 has the best version of Snake (the main character, not the animal) ever. May be cartoon-y for some. I thought he was a fucking badass. IMO more than just the best MGS game. Best game in fucking history. Moving on.
Adventure: Red Dead Redemption
Want to be a badass in the wild west? RDR gives you that option and lets you have fucking fun while doing it. Yes it may be very glitchy some times. But that's the charm. It reminds you that you're playing a video game. It's not my favourite game ever, but... It just does so much right. It's like The Godfather. Yes it's very good, not the best, but outstanding and entertaining. Mind you, Blade Runner is my favourite film.
Fighting: The Last Blade 2
A game on the Neo Geo that very few know and very few even talk about.
But why? Is it because this game was on the Neo Geo?
Have you ever wanted to play a sprite based samurai fighting game that's dark in presentation and soundtrack? Well The Last Blade 2 ticks all the boxes for a fun yet emotionally nostalgic fighting game that is still fun to play today.
Racing: Burnout 3
You know what, I like smashing my cars.
I may not be good at this game, but I like getting rewarded for ramming cunts off the road. *smashes into a racer* "YEAH FUCK YOU CUNT!"
RPG: Final Fantasy IX
You know how you make a perfect FINAL FANTASY game? Make it fun, make the story cliché and unoriginal, have the battles slow and tactical, have the characters be funny and quirky with dark backstories. Sounded sarcastic? I wasn't. That is how you make the perfect game in the series, or rather, the best RPG. I'd say Chrono Trigger follows not so far behind for the number one spot though.
Sport: NBA (any)
I'm not picky with this one. I like shooting hoops, as long as the game is functional and not cheap and broken, I'm fine with almost any in the series.
Strategy: Commandos 3
I may suck as it. I may die heaps. I may get angry and frustrated. But nonetheless, Commandos is a really fun and challenging game. Pre-MGS stealth.
MMO: Star Wars Knights of The Old Republic (I think it's called?)
I don't usually like MMOs. But I thought this one was fun for a short while. Then I got bored.
And there we have it.
Post below.
Action/Stealth: I don't think it'd fit under the other categories, but this one to me is S.T.A.L.K.E.R. Call of Pripyat. I've played the shit out of that game and I never get tired of either booting up a new game or continuing a long-forgotten save from who-knows-where.
Adventure: Banjo-Tooie hands down. Favorite game from my childhood, and it's deeply saddening to see what Microsoft has done to Rare. I adore the music and level design in this game, as well as original characters. I can probably rank this as my #1 favorite game of all time.
Fighting: Super Smash Brothers Melee/4. Tie between those two because I like the competitive scene for both, and I'm the best in my group of friends :^)
Racing: Mario Kart Double Dash. I like the duels mechanic. Also, Baby Park is literally the best course ever.
RPG: Paper Mario: The Thousand Year Door. Can you tell I'm a Nintenerd yet? It has excellent humor and is tons of fun. My first playthrough lasted over 36 hours!
Sport: I don't really play sports games, at least anymore. First one that comes to mind as one I enjoyed a lot was one of the Tony Hawk games, can't give more detail than that though.
Strategy: I'll have to go with Civ 5. I haven't tried the newest one yet but I'm sure I'll like that too.
MMO: I can't stand MMOs, I tried WoW one a friend's account once and it is not fun to me at all. Otherwise, I tried City of Heroes, and while the character creation was kind of cool, the gameplay was boring. They just aren't the genre for me.
Action/Stealth: Deus Ex: Human Revolution
Adventure: Red Dead Redemption
Fighting: Soul Calibur 3
Racing: V8 Supercars games (TOCA in UK, Pro Race Driver in USA & DTM in Germany)
RPG: Dark Souls
Sport: NHL games

Fighting: Smash 4
Racing: Need for Speed: Most Wanted (The PS2 one)
RPG: Literally any Pokemon
Sport: Tony Hawk's Underground 1 and 2
Strategy: Civ 5
MMO: Guild Wars 2, WoW is very dead to me
Action/Stealth: Deus Ex/System Shock.
Adventure: Clive Barker's Undying
Fighting: Mortal Kombat (any game in the series)
Racing: N/A
RPG: Path of Exile or Grim Dawn hands down. Was previously D2X/D3X.
Strategy: Civ V
MMO: Runescape
Action: Dishonored
Adventure: Batman: Arkham Asylum
Fighting: Injustice: Gods Among Us
Racing: Don't play any racing games
RPG: Fallout: New Vegas
Strategy: Magicka (unpopular but I loved it)
MMO: The only one I ever liked was LEGO Universe, which got discontinued
FPS: TimeSplitters: Future Perfect or Blood
Strategy: Populous: The Beginning
RPG: Skyrim
Fighting: Mortal Kombat 9
Sports: The NFL Blitz series
Stealth: Any Hitman game (What happened to all of the other "spy" FPSes like Perfect Dark and No One Lives Forever?)
Action/Stealth: Counter-Strike: Global Offensive
Adventure: The Walking Dead games (one hell of an adventure...)
Fighting: Mortal Kombat 2011
Racing: Need for Speed Underground 2
RPG: Any Pokemon game from gen 1 to 3
Sport: MLB 2K6 (the only one I've played but man it's fun, I still play it occasionally)
Strategy: Cities: Skylines (this shit takes some serious strategy so I'm putting it down)
MMO: Don't really play any, but I loved Runescape way back in 06-07
Platformer Oddworld: Abe's Oddysee/Exoddus
Action/Stealth: Team fortress 2.
Adventure: Uncharted 3.
Fighting:
Racing: SplitSecond Velocity.
RPG: Kingdom hearts I or II.
Sport: FIFA 2012 (Don't add me it's on PS2 :V )
Strategy: Wargame: Airland battle / Red dragon. It's not just about spamming units.
MMO: None.
Platformer: NeeN
Action/Stealth: MGS3
Adventure: Dark Souls
Fighting: Skullgirls
Racing: Burnout Revenge? Don't really play much though
RPG: Final Fantasy IX
Sport:
Strategy: Civ V
MMO: None really but I found FFXIV fun.
These games will probably change every time someone asks me this but this is what I can think of right now.
Action: Almost any of the GTA games.
Adventure: Grim Fandango and little big planet, each for their different kind of view on adventure.
Fighting: Soul calibur and tekken is fairly fun i guess even if i dont really play them often.
Racing: I dont really play racing games any more but when i was young i used to play nfs 2 and motoracer and motocross madness
RPG: fallout 3 or NV. Fallout 3 for its darker grittier everything gone down the shitter atmosphere and NV for not having to go through endless lines of subway tunnels to get anywhere and the dlc are good.
Sport: n/a
Strategy: Europa Universalis IV or WC 3 depending on if you want to count wc3 as strategy even for its countless great custom maps.
MMO: WoW for it's rich lore and runescape 04 for nostalgia
Action/Stealth: I love the Bayonetta games. The fighting's great, soundtrack never gets old, and Bayonetta herself is pretty wonderful.
Adventure: The Jak & Daxter trilogy for being the first game series I was a fan of until its completion. That and it carried my entire PS2 library, which was mostly junk during those years.
Fighting: Not much experience here, but I do prefer Soul Calibur over the others. I've played 3 and 4. If there's any game that ever made me want to be a fan of fighters, it's probably Skullgirls. Never tried it though.
Racing: The only two racing games I've ever played for more than a day or two have been Ridge Racer Type 4 and Gran Turismo 3: A-Spec. As I understand it, Ridge Racer was more arcadey while GT is a simulation so I'd place them equally on my list.
RPG: TESIV:Oblivion introduced me to Elder Scrolls, so that's at the top for me. Close second would be Tales of Symphonia, because its NG+ system let me play it so much that I eventually didn't want it anywhere near me.
Sport: None.
Strategy: Closest thing I can think of is the Fire Emblem series. Never really gotten into RTS games.
MMO: The original Guild Wars will always be a favorite of mine. Coming directly off of Runescape back then, it showed me horizontal progression in MMOs can be just as addicting as all the level and gear grinding if done right.
Action: Killing Floor
Adventure: Does Valkyria Chronicles count?
Fighting: Smash Bros
Racing: Mario Kart
RPG: Any elder scrolls game
Strategy: C&C Generals
MMO: WoW
Action: Hotline Miami, friggin gets the blood pumping and is ridiculously fun
Stealth: Thief 2, closest to a perfect game i've ever played
Fighting: Only really gotten into Smash so I'm gonna go with Project M
Racing: Dirt 3
RPG: SMT, mainly Nocturne.
Strategy: uhmmm.... SMT again I guess?
MMO: Never played one

Stealth: Sly 2: Band of Thieves

Adventure: Skyrim
Sport: Do the WWE games count? If so, Smackdown vs Raw 2008

RPG: Tied between Wizardry 8 and Morrowind
Stategy: Worms Armageddon
MMO: Kingdom of Loathing
Action: Final Doom, specifically Evilution
Stealth: Sly 2: Band of Thieves
Fighting: Tied between Skullgirls and Mortal Kombat II
Adventure: Skyrim
Sport: Do the WWE games count? If so, Smackdown vs Raw 2008

RPG: Tied between Wizardry 8 and Morrowind
Stategy: Worms Armageddon
MMO: Kingdom of Loathing
Smackdown vs. Raw 2010 was probably my favourite.
Action: Battlefield series, probably Battlefield 2142 and 2 were my favorites. COD 1-2 and 4.
Adventure: GTA Vice City and San Andreas
Sport: FIFA 10
Racing: Test Drive Unlimited, Forza 3
RPG: Skyrim, fallout 3.
Stategy: Total War Series, Company of Heroes, Command and Conqure Generals.
Adventure: Alan Wake
FPS: Painkiller / Serious Sam
Stealth/Action: Any Hitman game
3D Platformer: Psychonauts
MMO: WoW
Sports: WWE Here Comes The Pain
Smackdown vs. Raw 2010 was probably my favourite.
2008 was the last one I got. I did play a bit of WWE 13.
Children's game: Custer's Revenge
Action: Monster Hunter 4 Ultimate
Fighting: Super Smash Bros 4 is what I play the most now-a-days. But I used to enjoy Tekken 3 and Soulcalibur 3 a lot.
Adventure: I don't know, I've played a lot of adventure games. I've liked Mirror's Edge, and Mini Ninjas a lot.
Sport: Does Toribash count? It's kind of like wrestling or martial arts.
Racing: Hydro Thunder
RPG: Skyrim. It was my first TES games, I have since tried playing Oblivion and Morrowind, but it's hard to get into the older mechanics.
Strategy: Dwarf Fortress is strategy, right?
MMO: I never really got into MMOs, there's a few free ones that I only really played because my friends played. Like MapleStory, Runescape, and Fiesta.
Action/Stealth: Dishonored. The mechanics, the setting, the plot, it all came together beautifully.
Fighting: Mortal Kombat. Any one of the games. I played it a few times at a friend's house, and I don't really play fighting games, but it was pretty fun.
Adventure: Metroid: Prime. That game was an absolute masterpiece.
Sport: Wii Sports. I never really played sports games, but Wii Sports is fun with friends.
Racing: I remember this one game I used to play where there were a bunch of cars and there was some sort of storyline, but I don't really remember the story, or the name, or anything else about it. All I remember is that it was fun. I wish I could play it again.
RPG: Fallout 3. I don't really play RPGs, but I really liked FO3. My only complaint with it was that D.C. felt too small to me - I wanted to be able to explore everything.
Strategy: Crusader Kings II, just for the sheer immersion and level of detail. Paradox Interactive did a really swell job with it. Never played Europa Universalis IV, probably never will, but that seems good as well.
MMO: Earlier World of Warcraft. I'm talking pre-Cataclysm. WOTLK was tons of funs, Cataclysm was tons of buns.
Action/Stealth: Metal Gear Solid for top pick. It just kept getting better and better as the games went on. 2nd top would be Splinter Cell: Chaos Theory. The ragdoll physics were so much fun.
Fighting: Dissidia 012 for the Fighting/RPG spot. Fantastic replayability with a real sense of improvement and awesome, unique characters. For purely Fighting, Smash Bros. It needs no explanation.
Adventure: Tough one, but I'm going with Journey. Sure it was a short adventure, more like a journey, but it was a beautiful and memorable one.
Sport: Not really into sports game, but the old NBA Street games were really fun. Slamming them hoops never felt so good.
Racing: Mario Kart Double Dash/Crash Team Racing. Both were fantastic games, controlled great and all the action had super impact.
RPG: Persona 4, hands down. Between all the colorful upbeat tunes, awesome visuals, heart-string-tugging dialog and visceral combat, it's one of my favorite RPGs of all time.
Strategy: For the Strategy/RPG side, Final Fantasy Tactic. Hard as fuck at first, but really rewarding when you get your shit straight. Plus, I'm a sucker for anything class based. For just pure Strategy, probably Dawn of War: The Dark Crusade. Played it a ton, even if it was just the singleplayer on the easiest difficulty (I'm TERRIBLE at TBS). Nothing like setting up a Tau firing line and mowing down a horde of Orks with a volley of plasma.
MMO: Final Fantasy XIV: A Realm Reborn. You can be a cat girl labor worker. No way I was passing this one up.
Action/Stealth: Counter-Strike: Global Offensive or Deus Ex: Human Revolution
Adventure: Batman: Arkham Asylum
Fighting: Injustice or Pokémon Stadium
Racing: Diddy Kong Racing
RPG: Skyrim
Sport: Any downhill mountain biking game
Strategy: Total War series
MMO: Star Wars: The Old Republic or H1Z1
Action: Halo Reach is my favourite, though I don't have a console now. There seems to be no simple consensus amongst the fans about which game is 'the best' which is a sign of healthy, consistent franchise.
Adventure: I'm torn between Jak and Ratchet. Both childhood favourites that packed in a good story, humourous dialogue, and not-frustrating platforming. I think their biggest success though lies in how the combat felt. Something that so many games fail is making you feel like you've put in some damage and half of that comes from the sound. Even with just the wrench or your fists, the smacking noise and knock-back just feel SOLID.
Fighting: Not gonna lie, Naruto. The anime might be a stinkin' pile of goat shit but the games are , so over the top and silly fun.
Racing: Dirt 3 is my baby and it's now working on steam <3 Splitscreen on xbox was a great timewaster, I used to play tag with my brother.
Little side story though, I came back to visit family after being at uni for months. It had at least a full year since I've touched an xbox so I loaded up Forza 3 to look at my profile again. I dunno what I was thinking at the time, because the only two cars I had were a stock Impreza and a 700 horsepower Ford Fiesta painted pink and green.
RPG: I don't really know what genre Recettear falls under so I guess this is the best place to put it. So cheery and a very addictive grind of filling up a non-existent wallet.
Sport: If by sport you mean throwing elves into a pit of hungry dogs then yes, Dwarf Fortress is my favourite sports game.
Strategy: Rest in peace, Command & Conquer. EA can't hurt you when you're dead.
MMO: While I might have done 1200 hours of runescape over 7 years, Eve Online is just too good. Death is a cheap and the people are great. 7o
I tried REALLY hard to limit my runner ups
Action: Bulletstorm, Metal Gear Rising, Saints Row the Third and CoD 2
Stealth: Dishonored and Metal Gear Solid (X sequel here)
Fighting: Mortal Kombat and uh, Chivalry?
Racing: Mario Kart (DD 4 lyfe) and Cel Damage
Sport: Lol no
RPG: Oblivion
Strategy: Dawn of War, specifically Winter Assault and Dark Crusade
MMO: WoW (WotLK best but i loved Cata), Runescape, GW2 and Eternal Crusade even though it isnt out yet :)
Action: TF2, Fallout New Vegas, the Ezio Auditore Asassins Creed games
Stealth: Uh... probably Splinter Cell Blacklist.
Fighting: Mount and Blade Warband without a doubt
Racing: I don't have the set up lol, couldn't play this genre If I wanted to
Sport: I might try Bloodbowl one day but for now, no
RPG: Fallout New Vegas
Strategy: Wargame Red Dragon, Empire Total War, Supreme Commander Forged Alliance, X-COM Enemy Unknown
MMO: My dead, cold corpse won't be seen at a desk with an MMO running
Puzzle I'm too stupid to enjoy puzzle games, but I completed Tomb Raider Legend once so I'll go with that
Adventure Deus Ex Human Revoloution
Edit:
Nostalgia Whore: Battlezone, Rome Total War, C&C Generals
Action/Stealth: Metal Gear series
Platforming: Older Mario games, Donkey Kong Country Returns
Adventure: Probably the second Uncharted game.
Fighting: Street Fighter series & Smash Brothers
Racing: Mario kart
RPG: Skyrim & Dark Souls
MMO: Warcraft
