So I was playing some Sonic Adventure 2 with a friend a couple of days ago and fell in love with a couple of the songs there. Unfortunately, not only have I almost never heard music like this before, but I am also shit when it comes to describing music. For me, rock is the thing with the guitars, metal is the thing with more guitars, jazz is the thing with the saxophones, dubstep is the thing with the [del]fecal matter[/del] bass and classical is the thing with the pianos and violins. So yeah...what genre would this be and if you know any artists who make music like this, do share.

Electro is the general direction you're looking for I think, but that term is pretty general. You might also consider looking into electro-industrial/aggrotech.

If I like a style of music I often try to explore the artist(s). That usually brings up a lot of things I may or may not be looking for. You have to explain what about these tracks you like the most to narrow down the results.
I did some research on [URL="http://segaretro.org/Heigo_Tani"]Heigo Tani (AKA Wall5)[/URL], the arranger for those tracks. I looked through his discography and found some stuff, mostly DDR and Beatmania remixes. I only found two with remotely a dark style, like SA2.

That was awesome, and after looking a bit, Electro-Industrial and Aggrotech seem more or less what I'm looking for. Not quite the style (or as good IMO) of Everett's SA2 songs but great nevertheless.
