I have 2 monitors currently running on an EVGA 560ti but I was curious if it is possible to add in my old NVIDIA 128mb PCI card to my system to run a 3rd monitor on for internet browsing/youtubing purposes.
Is it possible and how hard would it be?

It is possible, if you have an open PCI slot. However, it's pretty likely that the old card is no longer supported under current drivers, so you would probably have some software issues. The old card probably wouldn't provide any acceleration, possibly not even display all resolutions.
If your current card has any additional open ports, that would be preferable to use. From my Googling, a 560 Ti should have two DVI and one mini-HDMI that can be used.
Yeah, i use both DVI ports on the 560 and the monitor I'm looking to use doesnt support HDMI, only VGA
I thought you can only use one gfx card at a time with the exception of crossfire and sli?
What are your other specs? Do you have an IGP?
I lack a DP -> VGA adapter, so I have one screen connected to a HD7850 and the other to the IGP HD4000

No. CrossFire and SLI are for multiple graphics cards being used for a single display (or a single virtual display, in the case of Eyefinity and whatever nVidia calls their version of Eyefinity).
Multiple graphics cards being used for multiple displays, with no 3D program spanning across both, works fine.

I'n not sure what an IGP is
but my system specs stand at
EVGA 560ti
AMD 960t unlocked
12gbs ram
mobo is a 870-G45
System is old, but does what I want it to do.

IGP is an Integrated Graphics Processor - a video output on the motherboard itself, powered by either the CPU or the chipset.
You'll be fine. If it's a 5, 6 or 7 series GeForce the current drivers will support it. Although resolutions may be a problem - don't expect 1920x180 resolutions with it. You'll be lucky to get 1064x768 with a 128mb card and still retain some acceleration.

actually nVidia provide legacy drivers for the GeForce 4 series. They will probably screw your 560 current GeForce drivers though - so I wouldn't go for installing them in parallel.
The only way to find out I guess would be to plug the card in and see if your current GeForce drivers pick it up at all. Connect a monitor, see if there is an output and go from there..

Im not sure a geforce4 would really be all that great for flash player, not the current versions anyhow, run like hot garbage on current cards as well. But if you disable hardware acceleration it'll run off your CPU instead so you could just have it running the display, that would work.
