Although Banished doesn't really fit your preferences I consider all 3 of those games incredible. Although Darkest Dungeon is in Early Access so it's a tad unstable, it works fine but sometimes I have trouble loading saves. Also Banished is currently 70% off!

I have to warn you though, the story is intriguing but there really aren't that many quests from what I've heard .
But the exploring and surviving is fun too (fun enough that it cost me 35 hours of my life).
Figuring out how to play it is half the fun, if you do look up a guide make sure its only the basics.
I feel like it might make the game a bit less fun if you know everything about it.
Edit: Don't drink standing water, your character will get the shitters.

I did a review on it not too long ago, because I LOVE this game a lot and I never do reviews at all. I think I got a basic outline of the pros and cons; and it is an ever-progressing game that is fun and rewarding and can be played as a challenge, or play to relax. Story mode isn't released yet, but they've released a whole new map about a week ago along with plant foraging, more food and drinks, a complete UI overhaul, and bears. Devs are active, good userbase with a workshop that translates the game in different languages.

It is in alpha right now, and I NEVER buy alpha games EVER. This was an exception and I don't regret the purchase, but if you don't want to take the risk, it's no trouble. I think it's on sale right now, idk
