I have googled and googled to find the answers to my questions, but there seems to be none else with the problem.
I have installed conky and and created the .conkyrc file and added my chosen text.
I then type conky into terminal and then this always happens (image Below) and I have used many different blocks of code and there is a similar or the same terminal output.

Check the conky script for CPU Usage listing, it's probably trying to list two cores while you only have one.

So then that means the code is wrong... so every script i have used is wrong? I will check though.
Every script you have tried is probably for dual-core CPUs.

the scripts could certainly use some more abstraction, like checking for multiple cores, but that's good practice and we don't like good practice here.
The issue is that most people write scripts for themselves, not everyone else.
