My iPod Touch is 2G and is version 3.1.1.

Someone told me to downgrade to 3.0
I'm doing that at the moment.
I'm not sure what it is but I vaguely remember it starting with 7.
Just upgrade to 3.1.2 and use blackra1n, it doesn't get easier than that.
If it's pre-loaded 3.1.1 it is classed as an "Updated 2G" and thus rendering Blackra1n useless.
How do I install third party software such as Cydia after jailbreaking?
When you jailbreak you normally install cydia, try resetting your home screen
Settings>General>Reset>Home Screen Layout

If you used blackra1n you install it through the blackra1n app which will appear on your home screen after jailbreaking
