Can't protect against the clueless end user though. My company got hit by a cryptolocker twice last year because people like to click things they shouldn't.
Or they like to misspell chipotle and just blindly trust a website.

The IT team should still be keeping backups disconnected from the network. For a university I would say weekly is the minimum acceptable time frame.

We do keep backups. We had a rougher setup before the first one, but after that we setup shadow copies of our drives.
After that the second one was pretty much just a bump.
