VirtualBox - http://www.virtualbox.org/
Works on/with just about any modern OS. In my experience its worked really well, even on my weak Asus netbook (running Ubuntu) I can run VirtualBox virtualizing Windows XP without any noticeable speed decreases.
Virtualbox is probably your best bet, but I personally use VMWare Workstation + the VMWare ESXi Hypervisor (means I can prepare a VM in workstation then deploy it straight to the hypervisor)
VirtualBox is awesome. I really love it and it's not too hard to use either.

VMWare is definitely the better choice for a professional setting because of the ability to do what you mentioned (I use it at work). I love it!
I guess I should have asked what exactly you wanted to use the VM for, but if it's just to run Ubuntu in Windows then VirtualBox should suit you just fine.
