Creating a virtual VGA monitor and setting up a VNC server to use it

I want to be able to reuse my iPod when it's not in use - therefore, I want to be able to create a
480x320 virtual monitor, set up a VNC server that only displays what's on the virtual monitor and to VNC in with my iPod. While I have the vnc on the iPod covered, I still have to find a way to create that virtual monitor and the vnc server.
Help would be appreciated!
Are you running vista or 7?

Because if you are, I don't think its possible to have virtual monitors at all
This seems like a poor man's dual monitor.

And it definitely is possible if you used a virtual monitor driver, either self written or third party.
