Upgrading PC for Christmas. I want your opinions! :D

First time I have ever upgraded a computer rather than just buying an outright new one so I am asking for tips on what to watch out for. I've heard of "bottle-necking" which I assume means that one piece could be holding down the computer from doing its best, that's what I am trying to prevent.
My current specs (2008-2009 technology)
GPU: GTX 260 SLI Config
CPU: I7 920
Ram: 6GB
OS: WIN7 Home Premimum
Motherboard: P6T DELUXE V2
PSU: 1000
Hard Drive: VelociRaptor 300GB 10000 RPM 16MB Cache
Upgrades
GPU: Single GTX 580
CPU: I7 2600K
Ram: Extra 2GB DDR3 '
Motherboard: P8Z68 DELUXE
I will be keeping the hard drive, and PSU as I don't see any need for them to be upgraded at this time. Thank you for your time in helping me!
If this is for gaming I'd honestly just get an i5 2500k and the 580 is more than powerful enough so you could just get a 570 if you wanted. Also highly suggest getting an asrock z68 extreme3 gen3, great motherboards but you can get whatever you want.
you could stick with the 920, it's still a good CPU
if you haven't already you could overclock it, instead of getting a new cpu/mobo/ram get an NH-D14
