Which should I get?
I currently have enough for an 8GB iPod Touch.
I would either be getting an iPod Touch 3rd Gen (probably gathering enough for 32GB first) or else PSP 3000 model.
Either way, I'd be getting the device for fun.

Well, I'd wait for the iPod refresh if you were getting on doing that. And I think the PSP is kind of dying, so probably iPod. That said, there are some games on the PSP.
Depends on what you really want to do.

Depends on how easy it is to get custom firmware on a PSP 3000. As I recall, when I left the homebrew scene, it hadn't been done yet.
If you can get CFW on a PSP 3000, go for it. You'll be able to play a ton of games via emulators, and the sound quality of a PSP (Now this is pathetic) is definitely comparable to an iPod Touch.

You can get CFW on a PSP3000 but it resets if you turn off the device properly.
PSP is dying, I know a lot of stores aren't selling any PSP gear now, I made the mistake of going with PSP3000 and updating straight away, so I can't install CFW now. I can, but I can't be bothered to fix it.

Nintendo DS is funky because the games are truly great. But the PSP isn't.. as worthy come to think of it. Sure I was addicted to that thing, GTA and Burnout are superb.
Its just that if you are a teenager and younger then you will enjoy it more than the Ipod Touch.
The ipod touch is slick... gaming is just... Call of Duty and Angry Birds.......
It has Youtube which at times dominates my web surfing on it... so that is one of the best aspects for it. Enjoy it

PSP-2000, since what you can do in terms of homebrew on the 3000 and above is very limited.
If you're going to play games, get a PSP obviously. iTouch is more for the surfing and little fun, a game once a while.
Just get an iPod Touch. I have a PSP and I barely use it.
If you do get a psp, get an earlier 2000 model so you can install custom firmware on it. It's really quite simple, and makes your PSP A LOT more useful.

Wait for the new iPod Touch and get that, there are lots of games and other things. The PSP is sort of dead, i have one too and i never use it.

I preferred the fat style psp anyway. It felt the best in hand, I don't mind the PSP Go, it just doesn't seem as great to play as the original.
Ipod Touch is great for gaming at times actually, Call of Duty and Grand Theft Auto are great use of the capabilities. I do like the simple addictive ones too. Great that they are dirt cheap too.
iPod touch is more portable, has a better screen and has a ton of apps that don't require buying a special battery or something stupid, I personally haven't touched my PSP in a while since I got my blackberry and netbook...
Get a PSP 2000, better than the 3000 and you can get CFW on it easier.

Wait until E3.
By then, 4th Gen iPod Touches should be available or at the least announced, and at Sony's thing they're definitely going to have something about the PSP mentioned. Then you can evaluate which features one has over the other that you prefer, or you can decide on waiting out for something better if something better gets announced.
If its for music, Zune HD
PSP for gaming, iPod Touch for music.
