It's a great show but it's better if you go in not knowing much about it.

Not really. It's still good if you watch it after knowing everything but it's a different experience.

If you're interested in the story I'd recommend the anime. Its a great adaptation and the deaths are (probably) not as graphic

I finished FMA:B today and now I'm feeling that post-anime depression settling in.
I don't know where you got this assumption, I mean every single piece of media I've seen for it makes it look like the dark waifu-bait isekai that it is
I dunno about him but I only every saw one picture of the show before I watched it and it looked like a typical fantasy show to me. Of course I did read a description of the show on MAL so I did know some shit was gonna go down, just not on what scale.
Could be worse though, I went into Blood C expecting a show where people died but holy fuck, people get fucking disemboweled and exploded into gore in that show. Had to give it up because everyone just kept dying horribly.

there's no reason for San to go with the MC though? their method of living is fundamentally at odds so even if San is warming up to the MC, there is no reason for her to follow the MC as he go back to rebuild the town with the others. It's the whole theme and tone of the movie.
Also, literally the first thing the MC did before he leave the village is to promise he will never be back iirc
