If Rakugo season 2 counts then I pick that, but it's not fair to have two halves of the same show be the AOTY two years in a row.
If we exclude Rakugo for that reason, Houseki no Kuni edges out as my AOTY.
Right now honestly my favorite show of the year is Mahoujin Guruguru. I really like Garo Vanishing Line and Houseki no Kuni as well, but Guruguru edges them out.

I wish the cgi wasn't so inconsistent, it's my only real complaint besides a somewhat un-engaging first episode.
I thought that I'd like Ancient Magus's Bride, but something about the show leaves me completely unengaged and with no emotional investment in any of the characters or anything that's going on.

Houseki no kuni.
Though I did miss out on a good deal of shows this year due to entrance exams.
Houseki no Kuni is fantastic and it breaks my heart every time someone writes it off because it's CG and sounds a little bit like Steven Universe
Infini-T Force's final episode is out, and it wrapped things up nicely. Despite the fact that hardly anybody was watching it since it isn't streamed on the usual sites like Crunchyroll, Infini-T Force turned out to be a quiet achiever and a fun little show with some nice CG animation and action with no cel-shading or any limited framerate. It's no masterpiece, but it's an enjoyable action series and worth watching.
I think it could've done a bit more with the fact that it was a crossover of Tatsunoko heroes, seeing as the show doesn't really delve into their individual universes or backstories, but it does keep the show accessible without requiring any prior knowledge of Tekkaman, Hurricane Polymar, Gatchaman, or Casshern.
I finished watching Cowboy Bebop with my mum (her first anime). We both agree that it was pretty good, but episodes were unequal. The way each character's story is resolved is really well done and satisfying though in my opinion. Also the "Pierrot le Fou" episode had the best animation [I]by far[/I]. It hardly compares to the rest of the series.
But the most marking thing about Cowboy Bebop will always be the music. So fucking good and varied. I downloaded it all and I can't stop listening to it. I know animes have a weird habit to mix up all their genres in sometimes awful ways (I'm looking at you, Gurren Lagann) but this soundtrack remains consistently good and enjoyable. Incredible job.

I was expecting Shoujo Shuumatu Ryouko to be good because I'd read the manga and loved it, but it managed to be even better than I thought it would be.

Maybe just look for WN adapations then, about 90% of them are fantasy/isekai/reincarnated stuffs.
Most of them lacks translation though, or are updating very slowly.
