I'm also pretty picky about animation style. I prefer a more polished and "realistic" look.

Animation and situations like that are what I hate. My girlfriend used to watch this show, and it drove me up the wall. That just isn't funny to me. Fair play if you enjoy it, but that's not my scene.

Tell that to the half or so of all anime every season that exist only to adapt 13 episodes worth of an LN or manga as an advertisement and never get any more material because the market de-incentivises full adaptations and risk-taking.

Even so the problem isn't *nearly* as prevalent as it is in american TV shows.
Look at long running serials like the simpsons, buffy, friends, how I met your mother
They just go on forever with no hint of resolution.
Also you can smell the shit-stink of a bad LN/Manga adaptation from a mile away once you know what you're looking for. Even when I was new to anime I was good at dodging terrible shows, just show some initiative and do a bit of research into a show and 9 times out of 10 you'll make the right call.

The problem isn't the bad ones, it's the good ones that don't get continued because either otaku have shit taste or the publisher production committee says no.
But even ignoring adaptations, the fact that most original anime is designed to have a start, middle, and end is a huge plus.
I don't think it's a coincidence that nearly all my favourite anime were anime original.

Though you've probably already watched these, Cowboy Bebop and Trigun are space westerns (Trigun a bit less spacey) with adult themes. Those are also two of the few I've watched dubbed over subbed.
Black Lagoon, though not as excellent as the above two, is pretty good too. Kinda similar to Cowboy Bebop.
Planetes is a very grounded in reality depiction of what near future of space travel could be like. If you're into space stuff, absolutely would recommend.

Cowboy Bebop rules, yeah. I liked Trigun when I was a kid, but I've got a feeling that I wouldn't enjoy it nearly as much now since I've gotten a lot more picky about what I watch. The humor in it just wouldn't appeal to me anymore, and that's such a huge part of the show.

Evangelion is something I would definitely like to finish, yeah. Otherwise, if I stop watching a show, it's usually because I wasn't impressed with it. I do give them a fair shake, though. Unless it's just hopelessly off base for me, I will always give a show about five episodes to get going. If it still hasn't captured me at that point, I'm out.

Monster is really good but it's like 70 episodes long and not the quickest moving thing in the world.

I went into Cross Ange expecting a 4/10 boobfest with redeeming action. The only reason why I watched it was because people talked about it here so I put it in my to-watch list and had nothing else to watch. Man my expectations were slammed to the ground. It had an actual plot where things were happening and constant character development and things kept getting more ridiculous and interesting as time went on. Once I hit about episode 8 I had to know what happened next and spent the rest of my free time binge watching the remaining episodes.
9/10 so generic but oh so good. I feel like I'm going to be in the minority here.

Because this describes it pretty well.
Just the first 4 or 5 minutes alone give you a good sense of what you're in for. Kids growing up in a dark, supernatural world.

I guess i'm late, but you can never recommend SSY too much. It's just that it's not a series with a lot of action and animation has hard dips in some episodes. But the atmosphere and story is amazing and I'm pretty sure you BDA will love it considering you hate ADHD scenes, since this is the polar opposite of ADHD.
