The biggest issue (for me) with the original F/SN anime was that it used some bits from all three routes in the VN so it kinda spoils a few major things from them.
Finished Psycho Pass. I quite liked it. Wasn't my favorite show of all time, but it was engaging and entertaining. Is Psycho Pass 2 worth the time?
Have watched the first few episodes of Shin Sekai Yorie(?), and I'm deeply confused. It's pretty and interesting, but I have no idea what's happening. Something about a tricksy cat?

UBW isn't the same as the original SN anime, it won't spoil as much but it'll still spoil bits of the first route of the VN (Fate -> UBW -> Heaven's Feel. Fate doesn't really have a good anime adaption yet). However as said if you watch Zero afterwards it'll spoil pretty much every other routes in the VN.

Okay I'll be sure to avoid Zero after watching UBW. I just want something to grip me into the series and then I'll want to play/watch everything about it if I end up liking it.
Just watch Zero if you want something to grip you into the series. It's self-contained and doesn't necessarily need prior knowledge of the rest of the series once you get through the first episode. It will spoil aspects of Fate/Stay Night but I don't really think it'll impact how much you enjoy the show. UBW I feel is lacking by itself without the context of the other routes/Zero, ie certain characters are just not developed because it isn't "their route".

Fair point, at least you aren't pulling the chronological order shit. Fate is just at a weird place where you can't really get the original story if you want to watch the shows only without jumping through hoops

Then the options are:
1. The read the VN, which not everyone is keen on doing
2. Wait, possibly forever, for them to reanimate the Fate route
3. Read the wiki when you're done with what UFOtable has animated to figure what actually went on in the other routes (I kinda ended up doing that to fill in the gaps after the Studio DEEN show many years ago)
4. Watch the Studio DEEN show to kinda figure out what happens in the Fate route
I'm not saying that either option is the right option.
Fate/Zero is a good show I can recommend easily. UBW comes with astericks.

I wouldn't really call OPM a trope-breaker, since it's just a parody making fun of shounen anime/manga and there are plenty of other things that do that, but that's splitting hairs. I can't think of many shows based on subverting tropes that aren't comedies, to be honest. My memory fails me for "lighthearted genre, but dark" shows too. I guess Evangelion would be the original example for mecha if you haven't watched that, but there's one other show that comes to mind.
Dai-Guard is a mecha series about a bunch of salarymen piloting a giant robot owned by a private company, where the robot is a clunky piece of shit and beaurocracy and paperwork are a bigger obstruction than the monsters they're fighting. Parodies and lampshades the mecha genre without being cynical about it.

The stuff that Zero spoils in relation to routes other than UBW isn't really any different to what it spoils regarding UBW since it's set before the divergence in routes in F/SN, but what it does spoil relative to those three routes and particularly UBW can quite heavily impact those if you watch them/read them after, since Zero is a predetermined tragedy written *after* the original VN.
Watching ufotable's UBW and then going into Zero is fine, and you'll most likely glaze over the minor spoilers (mostly relating to the Fate route). What Zero spoils relative to UBW is too much to ever recommend Zero to be watched first as far as I'm concerned.
If you can't wait for a Fate route adaptation you can always read the VN, and I'd recommend that because Fate is the first route and so kind of explains a fair few things that UBW doesn't as the second route (not that this impacts UBW heavily). The only real issue with UBW is that characters who are central to Fate or Heaven's Feel aren't as central to UBW (obviously).
The one thing you shouldn't do is watch DEEN's mess. Their F/SN is technically the Fate route, but I say technically because it pretty much steals elements from the other two to make something that's not quite Fate. The UBW movie is something that shouldn't be witnessed by mortal eyes.

Well, if you want the original mahou shoujo deconstruction, Revolutionary Girl Utena's your best bet. If you want something recent, Re:Zero is pretty much the the Madoka-style grimdark equivalent of your average isekai show.

Just curious, why would you consider Utena to be a magical girl series? Because other than the painfully long stock footage that leads into every fight in which she slightly changes outfits before engaging in disappointingly bad swordfights, Utena doesn't do anything magical girl-ish.
The whole "young girl goes through a magical transformation which is totally and undeniably a metaphor for puberty" thing is pretty much magical girl.
