They released some clips where they basically show the evolution of an episode done in 7 days.

They typically start an episode after a new one premiers and this gives them 6-7 days to make it. They do occasionally get head starts on episodes during the off season, but most of the episodes are made during the season within the window given.

Family Guy as well, and definitely for the worse. Seth MacFarlane just gave up entirely on putting any effort into Peter's voice, and whoever voices Louis is just sounds like an annoying bitch now.
