I'm surprised there just isn't loads of unaffiliated rogues with the force. The ability to cheat so well in gambling is all the excuse you really need, if you ignore some lucrative sports career. Plus the Jedi rules are so strict and fun-killing. No romance, in a world with Twi'leks? Madness. Surely the jedi order must've gotten a few (more) deserters during the clone wars. People from seperatist worlds, those that don't like the republic that much. I don't think that's edgy, that's just normal people not wanting to be monks. Jedi constantly travel to see the outside world even if they don't fully live in it, I'm sure a few must want to step over the line. (quick off topic question: were jedi trained as generals or did the force guide their moves?)
to the jedi training thing, they were only trained to be similar to generals after the clone wars started picking up and getting bigger scale, I believe.
for the grey/gray jedi thing, i believe it implies that while they might dabble a bit into dark side territory, ultimately they're still good guys. kind of an anti-hero thing, where they mainly look out for themselves but aren't totally selfish dicks. pablo is right though, you're either a jedi or not.

How come no one ever used the force to take a lightsaber out of someone's hand and like chop their arm off with it or something?
using the Force requires concentration, and in a saber-vs-saber situation both parties are probably pretty focused on not getting hacked to pieces by the opposing blade - in that moment you want to have your Force power going into attack and defence moves, and a moment's distraction could create an opening for your opponent to exploit

Having good reflexes is kind of a Jedi thing.
From what I've read, force users can project a bubble around them that protects them from other force abilities. If they get their ass kicked, they might screw this up and be left open to force powers. EG: Anakin gets his hand cut off by Count Dooku, whom then force pushes him across the room incapacitating him. Or at least that's what was thought up to explain why dueling force users just don't push, choke, or keep hitting the saber ignition switch off constantly from the get go.

Ventress has her sabers stopped and taken for her by Yoda in the first episode of TCW. But we can also rationalize that it's hard to nab something from someone's grip that they know a Jedi wants.

There are so many situations where a quick usage of the Force could solve a problem, but it understandably would make for a boring story, so it just doesn't happen.
