Not that I don't love these guys, but that's a bit flimsy of a way to "Canon" them...

Someone tells Tarkin that the fighters are TOO small and they're evading the Turbo laser, and that they're shielded. IIRC the first hit with the torpedoes would've killed the Death Star but it's literally said.

Yeah, you saw Darth Vader use a targeting computer, and his lasers even tracked the fighters, he didn't need to turn to aim.
Which is something they mimicked in Battlefront with their lock on feature which I thought was cool.

Yes, but in the movie they literally call it a targeting computer. So your question was answered back in 1977.
Wether it was effective or not, it was still a targeting computer.
IIRC when the X-Wing pilots were being given the briefing on how to attack the Death Star, someone (Wedge?) explicitly states that it's "too small to hit, even for a computer"
Maybe the force was why Luke was able to bullseye those Wamp Rats in his T-16 back home. They're no bigger then 2 metres.
