AGOT is probably the best mod for a game I have ever seen, just don't try to take over the coast of Essos.
I tried it as Daemon the wondering Prince and I get revolts to overthrow the monarchy in every kingdom every few years with no limitations on when it can happen. I thought making vassal kings would sort it out but instead they got overthrown themselves so now I have tons of perpetually piss-off vassal Republics ready to wreck my shit at the drop of a hat. That game did last very long.
Yeah I started in Tolos just above Valyria, used Balerion to take over Yunkai and Meereen and holy shit they just don't calm down and accept it, also Balerion finally passed at 216, I turned his bones in to an Axe, hatched his egg and am using the new dragon to fight the infinite revolts, this is my life now.

I think this may be my favorite overhaul mod for CK2, there is just so much fun to be had in the post-apocalyptic feudal Americas.
Seven Kingdoms is probably up there as well, if it will ever be updated. I actually think it is the better of the two Game of Thrones mods, sure there isn't as much stuff happening mechanically but sometimes less is more. Also the time period lends more to good gameplay, less giant blobs quickly decimating other giant blobs and the game being pretty much "over". Or maybe the map just sells it for me, I dunno'.
