Far as I can tell they're basically fancy save states. Stuff like starting with max money and items in Zelda 1, or starting in the last level in Dr. Mario, or starting at the Ridley fight in Metroid.

Zelda II was very much combat focused, so puzzle fights would be a neat thing. Samus Return introduced new stuff that paired really, really well with the classic formula and the devs didn't just slap them over the OG map, they integrated the Aeon Addons into it. They also reworked fights and rebalanced certain things, like the Screwattack.
I think it would be possible to remake Zelda II in a similar fashion, even if the physics aren't the same, they could make it even more combat oriented by giving us something akin to Smash. Would be a neat way to close the loop. Zelda II was the most influential game for Link's moveset, now Smash gives a bit to Zelda II.
They could also revamp the map, adds secret caves/overworld puzzles that aren't blatantly visible. They could work out visuals for all the towns and dungeons to fit a theme.
They could add a "First Strike Advantage" mechanic to the overworld battles, where attacking an enemy shadow would temporary stun them when you enter the battle screen, making traversing certain areas a tad easier. Altho, it's slow and if you miss and get it, you're stunned for a little while.
They could add/replace items, like add projectile items like Bomb and Arrows for dungeon/overworld puzzles. Allow the player to use stuff like the Hammer in fights.
Rebalance Thunder to not be a screen nuke but just a good AOE spell at a much lesser cost. Mostly bc the Thunderbird fight really fucking blows when you arrive with no magic to cast Thunder.
If at all, I just mostly want them to fix the bullshittery that is the later half of the game and other annoying things. Like respawning at Zelda's side instead of the entrance of a palace. And lives. Both are archaic concepts and don't need to be in. Just give us a sort of Mipha's Grace that saves Link right before a fatal blow by an enemy (most of them and bosses could have unique animation implying their deathly intentions, since all they want is Link's blood after all.) and teleport him to safety, either at the nearest town/Zelda's, the palace's entrance or the Boss's room. It would recharge over time. Something like that.
And also, just want more people to play it. It's a very fun game that, despite having EXP, doesn't require any sort of grinding whatsoever. It's all skill, which is basically the theme of the game anyways!
I actually dislike most of the changes they did to Samus Returns, it felt like it was done by a team who may have skimmed over Super Metroid once or twice but failed to understand why certain upgrades were they way they were. The Screw Attack being one of the biggest examples. In the 2D Metroid games, the Screw Attack was often the last item you'd find, and for a good reason, it was the game's way of telling you you've hit max power seeing as you're capable of buzzsawing through every non-boss enemy with ease, and once you hit that level you either make a beeline to complete the game, or start searching for all of the items to hit 100% without being troubled by enemies. I also found the Aeon powers to be way OP, and the general flow of how Samus Returns to be really annoying seeing as there's such an emphasis on stop n go with the melee counter, it was a bitch to just avoid enemies too seeing as the flying enemies that could swoop have a huge radius of where they can spot and swoop at you. Gimping the screw attack as hard as they did made sure everything could still kneecap you and it felt like shit, even when you were at max upgrades even the smallest of enemies could still trip you up.
As for Zelda 2, I'd love to see another game like it, but I'm not sure if I'd want them to pass it off to another studio like they did with Metroid. Though Zelda is one of their golden children so they might just keep it in house if they did a Zelda 2 remake. I agree with adding some actual usable items in combat, it'd be nice to be able to use the hammer for more than just a rock breaker. The boomerang would be nice too.

Zelda II is actually a favorite of mine from the NES. It's always nice to see people that don't just dismiss it because it's different.

For sports on the Switch there's at least the Fit Boxing port though. It's pretty decent, and I know someone who actually changed his living schedule for that game.

I genuinely wanted to do it legit, but that one room with the three lizalfos (two of which being silver) in the first trial pissed me off too much so I just cheesed it with speedrun strats.
That old-school villain Popeyelike design for Mario is really appealing to me for some reason. It's just so...elastic.
