RE6 had a lot of problems but I don't think the co-op was one of them.

You know what bothers me, that Leon decides to hold the .45 sorta sideways, even though he's had a perfect grip on his matilda longside the flashlight
On one hand it's a reference to the original game, but on the other hand that was a costume easter egg quirk, not an inherent thing Leon always did with a specific firearm.
I liked their gameplay and visual design (and I like how Dead Space 2 is unabashed, nutty schlock that runs the setting to craziness levels) but I feel like their plots and lore rapidly degenerated into oversized asinine bollocks, much like Gears of War and Assassin's Creed and plenty other games from that era. Most sixth-gen Western new IP's unfortunately have this problem of overscaling their lore to the point of making almost none of it matter because of how inconsequentially huge and interlinked everything is. Infamous also suffered from this later on, IIRC.

Honestly, that would be hilarious and amazing.
Had a similar thought when I first saw this RE2 Remake concept art and thought it looked intentionally reminiscent of the Dead Factory from RE3. Made me wonder if they had intended on including more of those areas so they'd also have them to repurpose for a possible RE3 DLC, or even just for a whole Remake later on.
A proper RE3 would be fucking amazing. Open worldish Raccoon City while being hunted down? Yes please
If they do an RE3 remake, I'd love to see Raccoon City before the outbreak. I wanna see what life is like in a city filled with arbitrary puzzles

Code Veronica was kind of polarizing. At the time, the graphics were pretty impressive, but the story is kind of whack. Also, Steve was an absolutely insufferable character.

Code Veronica is a fucking trashfire. It has some cool elements, certain enemies are awesome looking, and the game basically is the culmination of Umbrella kinda falling apart in the end. But fuck, there are nonsense puzzles, terrible encounters, a horrid story, and Steve. Steve is worse than you can possibly imagine. Steve genuinely feels like someone at corporate came in and went 'Make a cool male side character that's hip with the kids' and then they proceeded to fuck him up. He acts like a child, is shoehorned into flirting with Claire even though he's acting like a 13 year old compared to Claire who is a grown woman. Steve is also a little shit who actively interferes in the plot, making it even more confusing as to why the fuck the game tries to make you like him

Yeah RE4 is fine as it is. Plus the HD Project mod is still chugging along.

Oh my bad, I had never heard of Code Veronica until I read somewhere that "fans consider it to be the real RE3", and I gotta admit I read the stories of RE3 and CV on Wikipedia and RE3 seemed very uninteresting.

There is a common misconception that Code Veronica was originally meant to be RE3. The 'real' RE3 was never made because the project kept running into issues, so Resident Evil: Nemesis was promoted from side project to a main game, aka Resident Evil 3: Nemesis. You know how Resident Evil Revelations is mostly set on a boat? That was from the original RE3.
That explains it; how did RE3 compare to RE2? Also I imagine they might still want to remake CV since it is referenced multiple times in later games while the only reference to RE3 I heard was the classic "Raccoon City got nuked".
RE3 is pretty good. It's more actiony than RE2, there's more ammo and more zombies though you're not meant to be blowing away everything you see. The two big things in RE3 are that you only play as Jill Valentine but the order in which you do things changes events and that the game take place both before and after RE2. RE3 was originally a side game so it didn't add a huge amount to the world, just some Umbrella details I think. It has been a long time since I've actually played RE3 though.

As I said it's been a long time, so if you play as someone else I have completely forgotten them.
Side note, I unironically want Operation Javier to be remade into it's own thing, like a co-op side game with RE2Remake controls, and expand it a bit to fit it better.
