Overcooked/Overcooked 2 is an easy party game recommendation.
If you don't mind rebuying WiiU deluxe ports, NSMBU Deluxe is a fun co-op game. Sonic Mania and Rayman are also good platformers, and Overcooked was also already mentioned.
You mentioned already having some PC ports, but rebuying (some particular) indie games on Switch is worth the investment for the convince/luxury, portable play, and couch multiplayer. If you don't mind potentially rebuying games, I'd also recommend Rocket League.

I've actually already rebrought Stardew Valley for the convenience, so I can see me maybe rebuying a few more. Might be a good time for me to revisit Mania then, or get back into Rocket League.
So how is the new Mario Party, then? I was a sucker for Mario Party nights as a kid but I doubt the new game is going to drop to bargain-bin pick up prices anytime soon. It'd have to be pretty good to justify the price for me.
And if you like games like that, I strongly recommend Catastronaut. It's a more challenging overcooked in space.
Honestly from what I've heard it's only really good because it doesn't follow the same 'car' mechanic they used in 9&10. It has an absurdly small amount of boards and there's not really that much other content either. If you're looking for a decent portable party game I'd recommend it, but overall any of the Mario Party games pre-9 would probably be better.
RFG is super fun. If that’s footage from the switch port, it looks like it’s running at 60 frames, but I’m on mobile so I could be wrong.
Its still a mid gen ps360 game though so I hope they don’t charge too much for it.
My Wife isn't a big gamer either, but she's fallen in love with Captain Toad.

The only downside about Super Mario Party is you have to play it docked.

Super Mario Party is the only game I know of with a built in high five mechanic and I love it just for that.
Man, each day when I log in on the Switch, you just get a heap of messages of awesome new games that are being released.

Can we finally put the idea that Smash DLC announcements have to tie into game releases to rest? Everyone was so cocksure that a P5 port was a done deal. You get your two Persona 5-themed spin-offs, go buy a PS4 if you want the real thing. Marketing goes both ways like that; you buy the console you don't have to play that character you like in that new game.
